One of England s oldest cheeses, sage derby was traditionally eaten at Christmas and Harvest time. Today it is a much rarer cheese to find with its layers of sage that creates a glorious mottled affect against the pale yellow base of the British Derby cheese. Typically matured between 2 10 months with a yielding body and close creamy texture. Sage Derby has a subtle sage flavour and is great for melting as the heat makes the sage stand out in any dish.
