Richard goes to Italy with Parmigiano Reggiano Posted on 1st February 2019

A hard Italian rough-cut cheese with a distinctive mature, rich and fruity taste and complex, long lasting flavour. The texture is close and even with a granular crunch of salt crystals.

Provenance

Colla SpA is 100% family owned and managed, starting production in 1921 in a small dairy in Cadeo, in the province of Piacenza. The milk comes from farms situated in the province of Piacenza, bordering the dairies of Parmigiano Reggiano. Over decades and generations, Colla has continuously increased the production of Parmigiano Reggiano and is today highly ranked among the top 3 leading Italian companies. Colla cheeses are the result of a historical selection of the best dairies in the territories of Grana Padano and Parmigiano Reggiano, selecting from only 49 of around 150 dairies available.

Pairing Suggestion

Combine with an Italian Prosecco to contrast the savoury richness of the cheese.
