An Italian cream cheese similar to Ricotta but instead of whey, it is coagulated by adding acidic substances such as lemon juice, vinegar or citric acid. Mascarpone originated south of Milan and is one of the main ingredients in the Italian dessert, tiramisu but also a great addition to cheesecake and risotto. It is a bright white colour, creamy texture, very fresh and sweet to taste.
